Tasty Weeknight Salmon

Ingredients:

3-4 ounces salmon/person (ask for center cut)

1 lemon, thinly sliced

Fresh or dried dill

Salt and pepper

Olive oil

 Directions:

Preheat oven to 375°.  Lightly spray a baking dish with non-stick cooking spray.  Place salmon, skin side down, in center of baking dish.  Sprinkle salmon with olive oil, salt, pepper and dill and place lemon slices, slightly overlapping, across the top of the salmon.  Bake for 25-30 minutes or until salmon flakes easily with a fork.  Serve with wild rice and your favorite vegetable.
